In the competitive culinary landscape of Happy Valley, where traditional round pizza pies have long dominated the local pizza scene, an independent, family-owned shop is quietly rewriting the local pizza script by marrying the structural geometry of authentic Detroit-style deep-dish pizza with the aromatic, bold profiles of traditional Indian cuisine.

Located in the O’Brien Place building in a space formerly occupied by 8 Mile Pizza, Fresh Bite Pizza has just marked its first full year of operation. In that time, co-owners Bimla Dadra and her husband, Sahed Birsing, have cultivated a dedicated neighborhood following.

The restaurant serves as both a culinary experiment and a multigenerational homecoming for Dadra, whose roots in the local food scene run deep.

A Regional Legacy Reborn

For Dadra, the heat of the pizza oven is a familiar environment. She grew up in the State College area and attended State College Area High School. During her youth, her father operated College Pizza, a popular staple on Locust Lane.

“I was working with him, helping him out,” Dadra says. “I have experience, and I want to do more because my dad is retired now, just following his steps and everything he taught me, and so now I’m back with my own flavors.”

After her father retired and closed College Pizza, the family legacy continued in new directions. Dadra’s brother continued the family’s presence in the local food scene, opening the Indian restaurant Delhi Junction down the street. Dadra briefly relocated to New York, spending 14 years living in Queens with Birsing.

When word reached them in early 2024 that 8 Mile Pizza had closed because of structural and staffing issues, Dadra saw an immediate opportunity to return to Centre County.

The transition was smooth, aided by former 8 Mile Pizza manager Jesse Stutzman, who recognized that Dadra brought a unique business model to a turnkey location. Stutzman noted that while the previous establishment struggled by relying too heavily on a student workforce with high turnover, Fresh Bite Pizza’s strength lies in its tight-knit, family-run model.

The Physics of the Perfect Crust

What sets the establishment apart from large pizza delivery chains is an uncompromising dedication to the craft of dough making. Detroit-style pizza relies on a specialized baking environment to achieve its signature duality: a thick, pillowy interior paired with an incredibly crunchy exterior.

According to Birsing, the secret lies in low-intervention dough handling and precise pan placement. The dough is mixed using only four basic ingredients: flour, water, salt, and yeast. To create the caramelized perimeter that defines the style, Birsing layers premium cheese directly against the hot steel walls of the square baking pans. As the pizza bakes, the cheese melts downward, frying in its own fat against the metal. The result is a dark, lacy, crispy edge that frequently creates a friendly rivalry among diners over who gets the corner slices. Diners routinely compare the texture to high-quality Italian focaccia, noting that despite its thick appearance, the crust remains exceptionally light.

We tried some of the most popular offerings on the menu: the Hot Honey Pepperoni, the Chicken Tikka, and the Garden pizzas. The Hot Honey Pepperoni features mozzarella cheese and pepperoni topped with red sauce, dollops of ricotta, hot honey sauce, and a sprinkle of Parmesan cheese. It has just the right amount of spice, enough to tickle the taste buds but not so much that it overpowers the flavors. The honey adds a subtle touch of sweetness that makes it a favorite for many.

The Garden pizza, a slight variation of the Veggie Lovers recipe, is a great vegetarian option with fresh spinach, olives, mushrooms, roasted peppers, baby tomatoes, fresh mozzarella, and minced garlic. It’s topped with a lightly spiced red sauce, dollops of ricotta cheese, and a sprinkle of Parmesan cheese.

The Chicken Tikka pizza is topped with chicken, chopped green peppers, onions, and a thick, creamy tikka sauce, and garnished with cilantro. Each is a picture-perfect piece of art made up of vibrant colors and textures. The success of these wild combinations lies in the simplicity of the dough and its willingness to accept all kinds of flavors and toppings. It’s a sign that we’ve definitely not seen the complete scope of what Fresh Bite Pizza might offer.

We also sampled one of the more popular chicken wing flavors and Chef Birsing’s favorite, the Mango Habanero Chicken Wings, which are baked and tossed in a sweet and spicy mango habanero sauce. There are so many different flavors and combinations available on the menu that it will take many return visits to sample them all.

An Anti-Chain Philosophy

In an era dominated by prefrozen dough discs and centralized distribution networks, Fresh Bite Pizza operates on a strict scratch-cooking timeline.

Birsing mixes all dough batches in-house, ensuring that inventory is depleted and refreshed every 48 to 72 hours. This process preserves the natural activity of the yeast and eliminates the need for artificial stabilizers or chemical preservatives.

This emphasis on ingredient integrity extends beyond the pizzas. The restaurant’s chicken wings are systematically baked in the pizza ovens rather than deep-fried, utilizing minimal oil.

“Everything is healthiest,” Birsing says, highlighting the lack of preservatives. “We got raw chickens, and then we bake.”

The red sauces are blended on-site using proprietary ratios of herbs and spices to cut through the heavy fats of the cheese, addressing a common complaint among diners who find traditional commercial pizza sauces overly acidic or difficult to digest.

Birsing frequently uses customer feedback to refine his culinary ratios, maintaining a philosophy of continuous adaptation.

“The thing is, I’m not perfect,” Birsing says. “Sometimes we make mistakes. So instead of leaving a negative comment, just tell me how it could be better, and I’ll work on it. I’m always trying to improve the recipes.”

Community Integration and Future Outlook

The quiet summer months in State College allow the family to connect directly with permanent residents, neighborhood regulars, and local professionals who stop in during the afternoon hours.

The community-centric atmosphere is reinforced by the presence of the owners’ young children in the shop. Birsing smiled as he described how his toddler son already mimics the kitchen workflow.

“He knows when I make the dough,” Birsing says. “He comes and it’s called peek-a-doo. When I mix water, salt, and sugars, he knows the next step.”

This focus on family values and community integration has earned the restaurant high praise from local patrons, who view the shop as an essential alternative to corporate dining. Observers note that independent, “mom-and-pop” establishments bring an authenticity that cannot be replicated by franchise systems.

As the region prepares for the return of tens of thousands of Penn State students in August, Dadra and Birsing are shifting their operational strategy into high gear.

The menu is expanding to offer a broader array of side items, including loaded fries, paninis, specialized salads, and cheesecakes. Furthermore, to capture the high-volume late-night student market, Fresh Bite Pizza plans to extend its operating hours, providing fresh, made-to-order options until 3 a.m.

For Dadra, the business represents more than commercial success; it is a continuation of the lessons her father provided on Locust Lane decades ago. By maintaining tight control over production quality and treating the menu as an evolving canvas, the family is carving out a permanent niche, one square slice at a time. T&G
